New Downtown Eagle Restaurant Earns 5-Star Reviews

A New Culinary Destination in Eagle

A new mixed-use development in downtown Eagle is gaining momentum, particularly for food and drink lovers. The area is set to welcome a variety of new dining options, with Vessel Kitchen making its debut in Idaho. This fast-casual restaurant is preparing to open its first location on Thursday at the ground level of the Hemingway building, located at 55 E. State St. The opening follows the recent launch of Sire Song Wines’ Winemaker’s Loft and Bistro on the third floor of the same building, situated at the corner of Eagle Road.

Vessel Kitchen: A Growing Brand with a Unique Concept

Vessel Kitchen, which currently has 10 locations in Utah, is known for its innovative and flexible approach to dining. The menu features global culinary influences, offering a range of new American dishes that cater to active and health-conscious lifestyles. Diners can expect protein-packed bowls, flavorful salads, naan tacos, and scratch-made sides.

The restaurant isn’t your typical high-end eatery, with entrees priced around $15. However, it also stands apart from the usual burger-and-fries joints. Founder Roe’e Levy explained to the Idaho Statesman in March that the customizable menu is designed to accommodate various dietary preferences and restrictions. Before launching Vessel Kitchen in 2016, Levy served as an executive chef at the Promontory Club private community in Park City. According to a press release, the chain has achieved success by creating meals that are both nourishing and craveable.

Signature Bowls and Dining Experience

Some of the standout dishes at Vessel Kitchen include the Hash Hash, featuring braised beef, sweet potato hash, horseradish crema, feta, and pickled onion, and The Pioneer, which includes shredded chicken, sweet potato hash, Peruvian green sauce, Israeli pico de gallo, and micro cilantro.

The restaurant is designed to blend into the patio-loving Boise area, offering both indoor and outdoor seating. Customers can choose between traditional dining or quick takeout. Vessel’s website promises “a fine dining vibe at fast-casual affordability, speed, and convenience.” Orders are placed at the counter, and food is delivered directly to the tables.

Community Focus and Excitement

“Vessel is more than just a restaurant; it’s a hub for people who want to eat well and live better,” said Levy in a prepared statement. “The energy, the active culture, and the welcoming community in Eagle make it the absolute perfect fit for our next chapter. I’m incredibly proud to bring Vessel Kitchen to Idaho.”

The restaurant will be open from 11 a.m. to 9 p.m. Sunday through Thursday and from 11 a.m. to 10 p.m. on Friday and Saturday.

Celebrating the Grand Opening

On the day of the grand opening, Vessel Kitchen will host celebrations starting at 10:45 a.m. The event will feature giveaways, live music, and other activities throughout the week, according to the press release.

In the days leading up to the opening, the restaurant welcomed members of the community for complimentary preview meals. The response was overwhelmingly positive, with many leaving 5-star reviews on Google. One review praised, “Fantastic food, portions are larger than I was expecting. Lovely customer service. Will definitely be back.”

Given the strong reception at its Salt Lake City location, which holds a 4.5-star rating from over 1,000 reviews, it seems likely that Vessel Kitchen will continue to receive praise in Eagle.
